The last time you made pancakes, did you think about the chemistry involved in the baking process? Probably not.

In Chemistry today Mark Miller, PhD did a kitchen experiment making pancakes. Students submitted their own recipes for pancakes and each devised an experiment to test the role of a given ingredient (e.g. what happens when you leave out the egg, or what happens when you don’t put in baking powder?). In addition, students investigated the chemistry behind different ingredients, which included categorizing foodstuffs as different biochemicals (protein, carbohydrate, or lipid) and learning about how leavening agents work.

Lastly, everyone was encouraged to enjoy and to share their pancakes (the good-tasting ones) with those around them. #hillcrestunited
